Last night's Beef and Wild Rice Medley

Hello! Sorry I missed posting about this last night but I forgot :)

Well, we had a pretty darn good meal of Beef and Wild Rice Medley thanks to "Fast Fixes with Mixes". I love this book because most dishes take 30 minutes or less and it mixes prepackaged foods with fresh fruits and veggies. That makes life a whole lot easier. Most of them only use 1 or 2 items of prepackaged foods so if you have an aversion to that, it isn't used to an extreme.

So, here it is:
Beef and Wild Rice Medley
Prep: 5 min.    Cook: 40 min.
Yeilds 4 servings

Ingredients
1/2 teaspoon garlic powder
1/2 teaspoon dried thyme
1/8 teaspoon cayenee pepper
1 pound boneless beef sirloin steak, cut into 3/4 inch cubes
1 tablespoon canola oil
1/2 cup sliced celery
1/4 cup julienned green pepper
2 1/4 cups water
1 package (6 oz.) long grain and wild rice mix (Uncle Bens)
1 small tomato, chpped
2 tablespoons chopped green onion

Directions
1. In a small bowl, compine the garlic powder, thyme and cayenne. Sprinkle over beef.

2. In a large saucepan coated with cooking spray, cook beef in oil until no longer pink; drain. Stir in celery and green pepper; cook 2 minutes longer or until vegetables are crisp-tender. Stir in the water and rice mix with contents of seasoning packet.

3. Bring to a boil. Reduce heat; cover and simmer for 23-28 minutes or until rice is tender. Stir in tomato; heat through. Sprinkle with green onion.

Some tips: Soak the meat in a brine (salt and water) solution to soften it beforehand. We also cut off the fat from the meat. Slice some extra green pepper and celery if you have need for them in the next couple days. Also, this recipe calls for 1/4 each of green pepper and celery, we increased that to 1/2 cup for some extra veggies. If you don't like tomato, like me, leave it out! We didn't do this and I realized afterward that we very easily could have left it off and Ethan could have added some to just his. Also, if you like a little something extra, maybe some spice, dice up a hotter pepper and throw it in with the green pepper and celery.
